Suji ka halwa is your classiceveryday tasty North Indian sweet made with fine semolina, or cream from wheat (farina) sugar, ghee and nuts and spiced with cardamom powder. Away from Maharashtra the sweet is known as Sheera. Semolina is known suji, sooji, or the word rava. This easy halwa recipe melts in your mouth comes together in about 15 minutes. The recipe I am sharing is a family heirloom recipe that we've made for decades during family get-togethers events, special occasions, and festivals.

Suji Halwa is also referred to also as Rava Sheera in Western India and Rava Kesari in South India. The recipe is similar however, there are a few ingredients that are different from time to time.

However, semolina or even rava remains the primary ingredient. In some variants, milk is added instead of water and is known"milk-kesari". In order to flavor, typically, cardamom is added.

This halwa is also made to celebrate an occasion that is auspicious or a pooja ceremony. It can also be a festive occasion like Diwali, Ganesh Chaturthi or an event of religious significance held in your home or you need to indulge in something sweet. It also serves well as breakfast for the morning or dessert for after dinner.

Because this is a simple and quick halwa recipe there is no excuse or reason to prepare it. I often make sooji halwa to use as a bhog or Naivedyam to offer to the gods.

We always make Suji halwa with puri during the Navami ceremony of Navratri festival. Kala chana is also made. On this day, we offer Kala chana, suji halwa and puri to the little girls (kanjak) who represent the Mother Goddess.

The rava kesari , which can be found popularin South India typically comes with a synthetic orange color added. You can however make the same, with natural coloring agents, such as saffron threads or saffron powder.

Saffron threads or kesar can also be added in sooji halwa such as this Saffron Suji Halwa.

In addition to this recipe for halwa, I make other types of halwa recipe too. I don't make them everyday as much, but only during an occasion for pooja, or just for an indulgence for sweets.

Sooji Halwa Proportions

Sooji Halwa recipe is commonly used in large quantities during festive or religious celebrations. If you plan to make an enormous quantity of it, there's a certain proportion you have to follow.

The proportion of suji to water to ghee is 1:1:2:0.5 in a cup or glass measurement. I slightly deviate from the ratio and add little ghee and sugar.

  • Sugar one cup of sooji, or even rava, I will add 2/3 to 3/4 cup sugar. This means that the suji halwa has less sweetness or it is more sweet. One cup of sugar gives a very sweet taste.
  • Ghee - Add 2/3 cup of ghee in 1 cup of suji. For me 2/3 cup is the ideal amount of Ghee. You can reduce or boost the amount of ghee if you prefer.
  • Water - I add 2.5 cups water for 1 Cup of Suji. However, you could make 2 cups with water. The amount of water can be increased based on what the nature of the ravia as well as should you prefer the consistency of a pudding.

The ratio of suji to sugar to water to Ghee is 1:1:2:0.5 in a cup or glass measurement. I slightly deviate from this proportion and add the ghee a little less and sugar.

  • Sugar for one cup of sooji, or even rava I add 2/3 or 3 cups of sugar. Thus, the suji halwa has less sweetness or is just sweet. The sugar in 1 cup provides an extremely sweet taste.
  • Ghee - I also add 2/3 cup ghee to 1 cup suji. For me 2/3 cup is an adequate amount of ghee. Cut down or add more ghee if you prefer.
  • Water I use 2.5 cups of water to 1 cup of suji. It is possible to include 2 cups water. The quantity of water could be increased according to the quality of the rava as well as if you want a pudding-like smooth consistency.
